Beef Sinigang

A classic Filipino sour soup featuring tender beef, vegetables, and a tangy tamarind broth. This hearty and flavorful dish serves 4 people.

Ingredients

  • 1 lb beef shank or ribs, cut into serving pieces
  • 10 cups water
  • 1 medium onion, quartered
  • 2 medium tomatoes, quartered
  • 1 radish, peeled and sliced
  • 1 eggplant, sliced
  • 1 bunch water spinach (kangkong) or spinach
  • 1 medium daikon radish, peeled and sliced
  • 2-3 pieces green chili peppers (siling pansigang)
  • 2-3 tbsp fish sauce
  • 1 packet (about 40g) sinigang mix (tamarind soup base)
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring water to a boil. Add beef and simmer for about 1.5 hours or until beef is tender.
  2. Skim off any scum that rises to the surface. Add more water if needed.
  3. Add onions and tomatoes. Simmer for another 10 minutes.
  4. Dissolve sinigang mix in a cup of water and pour into the pot. Add the daikon radish and radish. Simmer for 5 minutes.
  5. Add the eggplant and green chili peppers. Simmer for another 5 minutes.
  6. Season with fish sauce, salt, and pepper to taste.
  7. Add the water spinach and cook for an additional 2 minutes until wilted.
  8. Adjust seasoning if needed. Serve hot with steamed rice.
